The Perigon will be the first building in Miami to offer a private residents’-only restaurant with a Michelin-starred chef. According to an official unveiling that was delivered to our doorstep, Starwood Capital and Mast Capital are partnering with famed Michelin-starred chef Shaun Hergatt to open a private eatery and speakeasy inside of the exclusive waterfront development. The announcement included a sample of Caspy Caviar, a convenient way to find sustainably-sourced top quality caviars and have them delivered to your doorstep. Caspy Caviar is also one of Hergatt’s brands, so is something we will expect to see at Nota, the name given to the new restaurant. Chef Hergatt plans to utilize woodfire grilling techiques in order to create approachable yet refined dishes that play to the understated elegance of the development. In addition to Nota, a private speakeasy dubbed FiftyThree will offer an intimate mood with a playful aesthetic. Also focusing on locally-sourced fresh ingredients, FiftyThree experiments with bold colors and patterns highlighted by bronze fixtures and accents and a whiskey-themed palate. According to The Next Miami, rather than using an implosion, developers are demolishing the interior of the existing building first and a conventional demolition of the structure will follow. The finished product will be a 18-story ultra-luxury development designed by Rem Koolhaus and outfitted by Tara Bernerd Partners. “We are designing more than a condominium at The Perigon, it is a private, highly serviced five-star resort exclusively for the owners. David Grutman Teams Up With Bad Bunny To Bring Gekkō Japanese Steakhouse To Brickell Posted on June 3, 2022June 3, 2022 by Sarah Elles Boggs David Grutman is getting ready to drop a hit with Puerto-Rican song meister, Bad Bunny in Brickell. They are teaming up to launch a new Japanese steakhouse in the restaurant space at 801 S Miami Avenue, under the condo development SLS Lux. This is not the first time that Groot has teamed up with a superstar to launch a new concept. Over recent years, the award-winning nightlife and entertainment company has also teamed up with Pharrell Williams to bring the uber-popular Swan in the Miami Design District and Strawberry Moon at the Goodtime Hotel in Miami Beach. This appears to be the first restaurant venture for Bad Bunny, we are anticipating it will be as good as expected from a Groot brand, but with prices lower than one of Bad Bunny’s concert tickets. As we all remember, the tickets from his last tour were so in demand that they were being sold for between $500-$2,000 apiece. So let’s talk about Gekkō! The space that Gekkō is slated to occupy is the same space that once housed Katsuya Brickell, which did not survive the pandemic. It has 8,412 square feet of indoor space, a private dining room and a 3,000 square foot patio with the capacity for 185 diners. Given the reputation of Groot’s other concepts that include Papi Steak, LIV, Story, Komodo and The Key Club, we are prepared for plenty of celebrity sightings. There will be a component of table-side preparations, as well as a full sushi menu and an omakse bar. For those who are not familiar, the omakse bar is where diners simply pay for the seat and the experience. There is no menu, the guests are left to the creativity of the chef. The interiors have been entrusted with The Rockwell Group to create a luxurious yet contemporary aesthetic that includes graphic wall coverings, jewel tones and natural wood accents. This will be the second location of Amal, with the first being an immensely successful eatery in Toronto.
